Brownies with double the chocolate, made gluten-free and topped with crunchy pretzels for a decadently healthy dessert or late night snack.
There’s no doubt that brownies are one of my favorite desserts so I like to make a batch about once a week to snack on when a chocolate craving hits. These brownies are the perfect solution for any chocolate lover trying to reduce their sugar intake and eat gluten-free.

Healthy Double Chocolate Pretzel Brownies

Best if stored in the refrigerator.
For substitutions: gluten-free flour for oat flour or brown rice flour; protein for coconut flour; sugar-free chocolate chips for regular semi sweet or dairy free; sugar-free maple syrup for pure maple syrup, agave or honey; powdered erythritol for powdered sugar or omit completely.
Ingredients
- 1/2 gluten-free flour
- 1/2 c almond flour, finely ground
- 32g chocolate protein powder PEScience
- 2 tbsp coconut sugar
- 3 tbsp coconut oil, melted
- 1/4 c unsweetened cocao powder
- 1/4 tsp. baking powder
- 1/4 tsp. baking soda
- 1 egg, room temperature
- 1 egg yolk, room temperature
Chocolate Ganache
- 1/2 c sugar-free chocolate chips, Lily's
- 2 tbsp sugar-free maple syrup
- 1 tbsp powdered erythritol
Other
- 5 gluten-free pretzels
- 2 tbsp sugar-free chocolate chips
Instructions
- Preheat oven to 350F and prepare a 6x6 inch pan with parchment paper.
- Place all the dry brownie ingredients into a mixer. Stir until combined. Add in the remaining ingredients and mix until a dough forms then press the dough into the bottom of the prepared pan. Bake for 8-10 minutes. Don't over bake.
- Let cool completely before melting the chocolate for the ganache. Stir in the maple syrup and powdered erythritol until smooth. The chocolate should be very sticky.
- Evenly spread the chocolate over the brownies. Break the pretzels into pieces and sprinkle them and the chocolate chips over ganache.
- Place in the freezer for 10-15 minutes for chocolate to set. Remove and cut into 9 squares and serve. ENJOY!
