Gluten-Free Apple Bread with Blueberries

  • 2 eggs, room temperature
  • 1 c unsweetened applesauce
  • 1/4 c coconut oil, melted
  • 1/2 c coconut sugar
  • 1 + 1/4 c gluten-free baking flour
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • pinch sea salt
  • 2 Granny Smith apples
  • 1/4 c blueberries

  • Preheat oven to 350 F and prepare a loaf pan or dish with non-stick spray.
  • Peel and finely chop one of the apples, set aside.
  • In a large mixing bowl, beat the eggs, applesauce and coconut oil together using a hand held mixer until light and fluffy (about 1 minute). Ultimately you can do this by hand using a whisk, just be sure the eggs are well beaten. Add in the coconut sugar and vanilla and mix until combined.
  • Next add the chopped apples, baking flour, salt, baking soda and powder. Fold the batter until no dry spots remain. Don't over mix if you can help it.
  • Pour the batter into the prepared dish or pan.
  • For the last apple, cut into thin slices and arrange them on top of the batter. Top with blueberries and bake for 50-60 minutes. Just until a toothpick comes out clean.
