Healthy Double Chocolate Flourless Peanut Butter Cookies (gluten-free, low carb)

These melt-in-your-mouth peanut butter cookies are flourless, gluten-free and refined sugar-free but still have double the chocolate! Read the recipe below to find out how these unbelievable cookies come together!

Ingredients

  • 1 c natural peanut butter
  • 1/2 c coconut sugar
  • 1 egg yolk, large
  • 1/4 c unsweetened cocao powder
  • 50g sugar-free chocolate

Instructions

  1. Preheat oven to 350F and prepare a baking sheet with parchment paper and set aside.
  2. Place the peanut butter, coconut sugar and unsweetened cocao powder into a mixer and cream together. Add in the egg yolk and continue mixing until a dough forms.
  3. Use a cookie scooper to create 1" balls and place them on the baking sheet 1" apart. Use a fork to press them down gently.
  4. Bake cookies for 7-8 minutes. Don't over bake. Remove from oven and let cool on the baking sheet for ten minutes before transferring to a wire wrack. Cookies will be very delicate so be gentle 🙂
  5. Melt chocolate and drizzle over each cookie or dip each cookie partially in the chocolate. Let chocolate harden at room temperature or speed up the process by placing them in the freezer for 10 minutes.
  6. ENJOY!
