Healthy Peanut Butter Pancakes

Unbelievably healthy pancakes loaded with peanut butter and high in protein to give your morning the kick start it needs!

Happy National Peanut Butter Day! When I woke up this morning, I realized what day it was by the flood of peanut butter posts on Instagram. You would think I would be more conscious of this day since my job revolves around peanut butter but I’m actually pretty terrible about planning those days in advance. Although, I am pretty good at whipping together a recipe last minute and still participate in this national day!

Healthy High Protein Peanut Butter Pancakes made Gluten-Free!

Ingredients

  • 1/2 c gluten-free oat flour or flour of choice
  • 32g protein powder PEScience 30% OFF code PBCHOCO
  • 1/4 c almond milk
  • 3 tbsp unsweetened applesauce
  • 2 tbsp natural peanut butter Nuts 'N More
  • 2 eggs
  • 1 tsp baking soda
  • 1 tsp baking powder
  • pinch salt
  • stevia to taste

Instructions

  1. In a mixing bowl, whisk together the eggs, almond milk and applesauce. Add in the dry ingredients and mix until combined. Stir in peanut butter until incorporated.
  2. Cook pancakes 1/4 cup at a time in a skillet or pancake pan prepared with non-stick spray over medium-low heat until bubbles pop. Flip and cook the other side until golden brown.
  3. Repeat until you have used all the batter.
