Fluffy pancakes bursting with blueberries–The best ever healthy blueberry pancakes made gluten-free and high in protein.
As much as I love winter fruit, I’ve been thinking about summer berries a lot lately. Thankfully it’s still easy to find delicious blueberries even in December. Yesterday, I had a lazy day memorizing lines for play I’m doing in February and these pancakes were perfect for my day at home.

The Best Ever Healthy Blueberry Pancakes
Fluffy pancakes bursting with blueberries--The best ever healthy blueberry pancakes made gluten-free and high in protein.
1/3 c gluten-free flour
1 large banana, ripe
1 egg, whole
32g protein powder or dairy-free if necessary PEScience 30% OFF code PBCHOCO
1/4 c almond milk
1/2 tsp baking powder
1/2 tsp baking soda
3/4 c fresh blueberries
In a mixing bowl, mash the banana using a fork. Stir in the egg and almond milk until smooth. Add in the remaining dry ingredients and mix until no dry spots remain. Fold in blueberries.
Prepare a skillet or pancake pan with non-stick spray and turn on low heat. Once the skillet is hot, cook pancakes 1/4 cup at a time. Cook about 1 1/2-2 minutes on each side or until golden brown.
Top with more blueberries and serve immediately.
I like to keep my pancake batter thick to get a fluffy pancake but the thickness will vary depending on the protein you use so keep in mind you may need to add more almond milk if the batter seems too thick.
