I made these no-bake truffles using just a few ingredients and then dipped them in sugar-free chocolate (I used Lily’s brand and I swear you would never know it’s sugar-free).

Healthy Chocolate Almond Butter Truffles
Notes
I had some left over chocolate so these macros aren't 100% accurate. I would say they are probably a little less than this.
Ingredients
- 4 tbsp natural almond butter
- 32g chocolate protein, vegan if necessary PEScience 30% off code PBCHOCO
- 3 tbsp agave
- 3 tbsp unsweetened cocao powder
- 2 tbsp almond milk
- 1/4 c oat flour
- 1 sugar-free chocolate bar, Lily's or vegan if necessary
- 1 tsp coconut oil
- flaked sea salt for sprinkling
Instructions
- Place the almond butter, protein, agave, cocao powder and oat flour into a food processor and blend until combined. You may need to stop and scrape the sides form time to time. Add the almond milk 1 tablespoon at a time. Blend until you reach a playdough like consistency.
- Roll dough into 12 evenly sized balls and place in the freezer for 20 minutes.
- Remove and melt chocolate and coconut oil together until smooth.
- Dip each ball into the chocolate and place on a piece of parchment paper. Sprinkle with flaked sea salt and return to the freezer until chocolate is solid. Store in an airtight container in the refrigerator.
