Healthy Pumpkin Spice Granola


This pumpkin spice granola is a perfect Fall recipe great for cereal, parfaits or snacking. Made with oats, coconut oil, maple syrup and pumpkin seeds to create a combination of sweet pumpkin flavor.

This granola is super easy to make and takes jut a few simple steps. Melt together the wet ingredients then mix them with your dry ingredients. Bake and enjoy! It’s that simple!

Healthy Pumpkin Spice Granola

Healthy Pumpkin Spice Granola--A perfect Fall snack made gluten-free and vegan.


  • 2 c gluten-free oats (not quick oats)
  • 32g protein powder PEScience 30% OFF code PBCHCO *vegan powders available
  • 1/2 c pumpkin puree
  • 1 tbsp extra virgin coconut oil
  • 1 tbsp blackstrap molasses
  • 2 tbsp maple syrup
  • 1/4 c pecans, chopped
  • 1/4 c pumpkin seeds
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg


  • Preheat oven to 325F and prepare a baking sheet with parchment paper.
  • In a small sauce pan over low heat, gently melt the pumpkin, maple syrup, molasses and coconut oil until combined.
  • In a large bowl, toss the oats, protein powder, seeds, pecans and spices. Pour your pumpkin mixture over the oats and stir until no dry pockets are left.
  • Distribute the granola evenly onto the baking sheet. Break up all big clumps.
  • Bake for 10 minutes. Stir granola and bake for another 10 minutes. Remove and let cool before serving.
