Healthy and flavorful cranberry orange pancakes made gluten-free and high in protein! Is there a better way to start off your morning than fluffy pancakes loaded with tart cranberries and a hint of citrus.
I always like to use bananas in my protein pancakes but you can replace the mashed banana with any starch such as applesauce, pumpkin or sweet potato.

Healthy and flavorful cranberry orange pancakes made gluten-free and high in protein! Is there a better way to start these Holiday mornings than fluffy pancakes loaded with tart cranberries and a hint of citrus.

Ingredients
- 1/2 c gluten-free oat flour or brown rice flour
- 16g vanilla protein PEScience 30% off code PBCHOCO
- 1 ripe banana, mashed
- 1 egg, whole
- 3 tbsp almond milk
- juice from 1 small-med orange
- 1/4 c fresh or frozen cranberries
- 1/2 tsp baking powder
Instructions
- In a medium bowl, whisk together the banana, egg, almond milk and orange juice. Add in the flour, protein and baking powder. Whisk until smooth. Stir in cranberries.
- Cook pancakes 1/4 cup at a time over medium-low heat until bubbles start to pop. Flip and cook the other side until golden brown.
