Hey guys! Today I’m sharing these super addicting Flourless Peanut Butter Cookie Bars packed with sugar-free dark chocolate chunks. I made these bars earlier in the week to celebrate National Peanut Butter Cookie Day (aka my favorite day) and I’ve been dying to share them with you ever since.
Is there even a better flavor combo than peanut butter and chocolate? You already know my answer since I named my entire blog after it. I love the combo so much that I’ve actually made hundreds of recipes using peanut and chocolate. Here are a few of my all time favorites and absolute must tries:

Flourless Peanut Butter Cookie Bars (gluten-free, refined sugar-free)
Notes
Coconut sugar can be replaced with any granulated sweetener such as Swerve.
Ingredients
- 1 c natural peanut butter
- 1/2 c coconut sugar
- 1 egg, large
- 1/2 tsp baking soda
- 50g sugar-free dark chocolate, chopped
- 1/8 tsp salt (optional)
Instructions
- First, preheat oven to 350 F and prepare a 6x6 inch pan with parchment paper and leave an over hang on all sides for easy removal.
- Next, in a large mixing bowl, beat the peanut butter, egg, coconut sugar, baking soda and salt (if using any) together using a handheld mixer until well combined. Mixture should be dough like.
- Next, fold in half of the chocolate. Press the dough evenly into the bottom of the pan and top with remaining chocolate. Bake for 10-12 minutes. Let cool before serving. *Best if chilled before serving

What is 50 mg of chocolate equivalent to.

50g of chocolate is about half of a chocolate bar. Most chocolate bars are 100g. Hope this helps 🙂
