The ultimate soft and chewy peanut butter bars loaded with dark chocolate chunks.

  • 1/2 c coconut sugar
  • 1 egg, large
  • 1/2 tsp baking soda
  • 50g sugar-free dark chocolate, chopped
  • 1/8 tsp salt (optional)

  • First, preheat oven to 350 F and prepare a 6x6 inch pan with parchment paper and leave an over hang on all sides for easy removal.
  • Next, in a large mixing bowl, beat the peanut butter, egg, coconut sugar, baking soda and salt (if using any) together using a handheld mixer until well combined. Mixture should be dough like.
  • Next, fold in half of the chocolate. Press the dough evenly into the bottom of the pan and top with remaining chocolate. Bake for 10-12 minutes. Let cool before serving. *Best if chilled before serving

Coconut sugar can be replaced with any granulated sweetener such as Swerve.
