Incredibly moist apple bread topped with blueberries makes for a great breakfast or mid-day snack. This delicious bread is made gluten-free and dairy-free for a perfect treat.
With it’s minimal ingredients, you can whip up this gluten-free apple bread in one bowl and in under 10 minutes it’s ready to pop into the oven. Did I mention I made this bread without using butter or refined sugar? Here’s what I used to make the bread:
- eggs
- unsweetened applesauce
- coconut sugar
- coconut oil
- gluten-free flour
- granny apples
- blueberries
- vanilla
- salt
- baking powder
- baking soda
- cinnamon
THAT’S IT! That’s all you need to make this unbelievably delicious (and like soooo moist) gluten-free, dairy-free apple bread with blueberries.

Gluten-Free Apple Bread with Blueberries
Ingredients
- 2 eggs, room temperature
- 1 c unsweetened applesauce
- 1/4 c coconut oil, melted
- 1/2 c coconut sugar
- 1 + 1/4 c gluten-free baking flour
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1 tsp baking powder
- 1 tsp baking soda
- pinch sea salt
- 2 Granny Smith apples
- 1/4 c blueberries
Instructions
- Preheat oven to 350 F and prepare a loaf pan or dish with non-stick spray.
- Peel and finely chop one of the apples, set aside.
- In a large mixing bowl, beat the eggs, applesauce and coconut oil together using a hand held mixer until light and fluffy (about 1 minute). Ultimately you can do this by hand using a whisk, just be sure the eggs are well beaten. Add in the coconut sugar and vanilla and mix until combined.
- Next add the chopped apples, baking flour, salt, baking soda and powder. Fold the batter until no dry spots remain. Don't over mix if you can help it.
- Pour the batter into the prepared dish or pan.
- For the last apple, cut into thin slices and arrange them on top of the batter. Top with blueberries and bake for 50-60 minutes. Just until a toothpick comes out clean.
