A moist and tasty banana bread is made using chia seeds and flax meal! This super delicious bread makes for a perfectly healthy, gluten-free and refined sugar-free snack.
I thought I would post one of my favorite desserts to make: banana bread. My different variations of this delicious dessert are some of my most popular recipes in my archives. If you searched banana bread on my blog you would get endless pages of results. Some different versions include: double chocolate, chocolate chip, lemon poppy seed, chocolate marble (I really like chocolate), cinnamon apple and blueberry flax.
For this bread, I was craving something classic. No crazy flavors. Instead, I added chia seeds and ground flax for a little extra fiber! Of course, I added protein powder for the extra protein but also to give it a delicious sweet vanilla flavor. You can use whatever kind of protein you like. Healthy Chia Flax Banana Bread
Ingredients
- 4 bananas, overly ripe
- 3 eggs, large
- 1 1/4 c gluten-free baking flour
- 64g protein powder PEScience 30% off code PBCHOCO
- 1/4 c almond milk
- 1/4 c coconut oil, melted
- 1/4 c granulated sweetener Swerve
- 1/4 c flax meal
- 3 tbsp chia seeds
- 1 tbsp vanilla extract
- 2 tsp baking powder
- 1 tsp baking soda
- pinch sea salt
Instructions
- Preheat oven to 350 F and prepare a 9x12 inch loaf pan with non-stick spray and parchment paper.
- Place the eggs, 3 bananas (save the 1 for topping), milk and vanilla into a mixer and beat until fluffy. Ultimately you can place them in a large bowl and use a hand held mixer. Add in the dry ingredients and stir until no dry spots remain. Add melted coconut oil and stir until incorporated.
- Pour the batter into the prepared pan and bake for 50-55 minutes. Let cool before cutting into slices and serving.
