I don’t know about you but my cookies need chocolate and lots of it.
Which is why I had to dip these cookies in chocolate for a double dose of my ingredient.

Healthy Chocolate Peanut Butter Cookies
My favorite thing about these cookies (besides how soft they are) is that they come together quickly and are made using whole food ingredients.
A few other things about these cookies is that they take less than thirty minutes to make from start to finish and store perfectly at room temperature for 3 days when lightly covered or in an airtight container in the refrigerator for up to a week.
My secret to the softest cookies ever is to keep them thick and under bake them; about 9 minutes in the oven was the sweet spot for me.

Healthy Double Chocolate Flourless Peanut Butter Cookies (gluten-free, low carb)
Ingredients
- 1 c natural peanut butter
- 1/2 c coconut sugar
- 1 egg yolk, large
- 1/4 c unsweetened cocao powder
- 50g sugar-free chocolate
Instructions
- Preheat oven to 350F and prepare a baking sheet with parchment paper and set aside.
- Place the peanut butter, coconut sugar and unsweetened cocao powder into a mixer and cream together. Add in the egg yolk and continue mixing until a dough forms.
- Use a cookie scooper to create 1" balls and place them on the baking sheet 1" apart. Use a fork to press them down gently.
- Bake cookies for 7-8 minutes. Don't over bake. Remove from oven and let cool on the baking sheet for ten minutes before transferring to a wire wrack. Cookies will be very delicate so be gentle 🙂
- Melt chocolate and drizzle over each cookie or dip each cookie partially in the chocolate. Let chocolate harden at room temperature or speed up the process by placing them in the freezer for 10 minutes.
