Healthy Cookie Dough Truffles

Unbelievably delicious cookie dough bites covered in decadent sugar-free dark chocolate made gluten-free and high in protein!

Notes
Oat flour can be replaced with brown rice flour or gluten-free flour.
Ingredients
Cookie Dough
- 1/2 c gluten-free oat flour
- 1/2 c almond flour
- 1/4 granulated erythritol or coconut sugar
- 32g vanilla protein PEScience 30% OFF code PBCHOCO
- 2 tbsp light butter
- 1/4 c unsweetened almond milk
- 1 tsp vanilla extract
- 2 tbsp sugar-free mini chocolate chips
- pinch of salt if butter is unsalted
Chocolate Coating
- 2/3 c sugar-free chocolate chips (Lily's)
- 2 tsp coconut oil, melted
Instructions
- In a microwave safe bowl, gently melt the butter. Stir in the almond milk and vanilla and set aside to cool slightly.
- In a medium bowl, stir together the oat flour, almond flour, protein, salt, and granulated erythritol. Add the butter mixture and stir until a dough forms. Fold in chocolate chips. Cover in plastic wrap and place in the freezer for 15-20 minutes. Remove and separate dough into 10 evenly sized balls and return to freezer while you melt the chocolate and coconut oil together.
- Dip each ball in the chocolate using a fork, let the excess chocolate drip before placing the truffle on a piece of parchment paper. Once all the cookie dough balls are coated, place them in the freezer until chocolate hardens and enjoy!
