This cookie dough is so delicious, I have to store it in the freezer to keep myself from snacking on it too much. When this cookie dough is in the refrigerator it’s so soft and creamy–basically it’s too easy to eat the entire jar in one sitting. Heed my warning and place this cookie dough in the freezer to keep from consuming the entire thing.

In fact, I might have about 10 different versions on my blog. I took a couple of my old recipes and merge them together. I used a lot of the same ingredients from the past and just played around with measurements to get a perfect tasting cookie dough. I have discovered that butter is a very important ingredient if you want your healthy edible cookie dough to taste just like the real thing.

Healthy Edible Chocolate Chunk Cookie Dough (gluten-free & refined sugar-free!)
Ingredients
- 1/2 c warm butter (light butter, low cholesterol, and vegan butter also work)
- 1/2 c gluten-free oat flour (gluten-free flour and brown rice flour also work)
- 56g vanilla protein powder PEScience 30% OFF code PBCHOCO
- 1/4 c coconut sugar
- 1/4 c granulated erythritol (can sub for all coconut sugar)
- 1 tsp vanilla extract
- 1/4 sugar-free chocolate bar, finely chopped
Instructions
- In a mixing bowl, whisk together the warm butter, coconut sugar, granulated erythritol and vanilla extract until creamy. Add in the oat flour and protein and mix using a rubber spatula or fork until a dough forms. Fold in chopped chocolate.
- Eat immediately at room temperature, pace in a jar and store in the fridge or freezer for later or roll into 1/2" balls for easy snacking.
