Can we talk about how dang cute these cookies are? Those primary colors remind me of an elementary school classroom, which reminds me of children, which makes me think about my niece and nephews and how I really just want to give them a big hug… What do these cookies remind you of? LOL. I’m sure there are all sorts of grammatical errors in this paragraph.
Anyway, back to these healthy monster cookies. I normally would be totally down for chunks of oats in my cookies but since I planned to share these with friends (who aren’t big fans of oatmeal) I blended up my oats first before adding them to the batter. Jokes on them, these are still oatmeal cookies.

Healthy Peanut Butter Monster Cookies
Ingredients
- 2/3 c natural peanut butter
- 2/3 c gluten-free rolled oats (measured after blending)
- 1/2 c coconut sugar
- 1 egg, lightly beaten
- 1 tsp vanilla extract
- 1 tsp baking soda
- pinch sea salt
- 2 tbsp water
- 1 standard size bag M&Ms
Instructions
- Start by placing your oats into a food processor or blender and blend on high until in powdered form.
- In a mixing bowl using a handheld mixer, beat the peanut butter and sugar. Add in the egg, water and vanilla and mix until combined.
- In a separate bowl, stir together the blended oats, baking soda and salt and then add them to your wet ingredients. Continue mixing with the handheld mixer until a dough forms. Fold in half of the M&Ms. Cover and freeze overnight.
- Remove cookie dough from freezer and let thaw for 20 minutes. Preheat oven to 350 F and prepare a baking sheet with parchment paper or silicone mat. Use a cookie scooper to make 12 1-inch evenly sized balls and place them on the parchment paper 1" apart. Top balls with remaining M&Ms and keep the M&Ms close together as the cookie dough will spread. Bake for 10-12 minutes or until edges brown but the center is still soft. Let cool on the cookie sheet for 2 minutes before transferring to wire rack to continue cooling.
