Avocado pudding is one of my favorite desserts to make, especially when you are in a pinch for time. This recipe takes just 5 minutes to make. Yes, you read that right. Just 5 minutes! Place all the ingredients into a blender or food processor, blitz until smooth and then chill until ready to serve. That’s it! 🙂
When life hands you lemons, make lemonade. Isn’t that how the saying goes? Well in my case, when your best friend hands you avocados, make pudding. Make the healthiest and most delicious–coffee infused pudding–that you could possibly think up. Because what else do you do with multiple ripe avocados?
Avocados are like really good for you!
Avocados are super rich in nutrients! They are a great source of vitamins C, E, K, and B-6, as well as magnesium and potassium. Most of the calories from avocados come from the fat content but don’t let that scare you away because it’s all healthy fat that benefit your hair, nails and skin.
Did you know avocados are high in fiber? They actually contain 3g of fiber per serving but who eats one serving avocado? So an entire avocado has about 15g of fiber!
Vegan Chocolate Avocado Pudding with Cold Brew
Ingredients
- 3 avocados, ripe
- 1/4 c unsweetened cocao powder
- 1/4 c cold brew concentrate
- 1/4 c maple syrup or sticky syrup of choice
- 1 tsp vanilla extract
- pinch sea salt
Instructions
- Place all ingredients into a food processor or blender and blend until smooth. Stop and scrape the sides as needed. Pour contents into a container and cover. Chill for 1 hour before serving.
