Best combo ever!
There’s no surprise here that I am a huge fan of the peanut butter and chocolate combination so it was obvious to me I had to make yet another peanut butter and chocolate bar recipe. I currently have a few here on the blog and they are all very different. My previous ones are super dense and fudgy–almost brownie like. These cookie bars however, have more of crisp to them and they serve a larger crowd!
I used a cookie sheet pan for this recipe, pressing the dough into a thin even layer. For a denser and more chewy cookie bar, use a small pan to create a thicker layer. Undercook the bars slightly so the center is still gooey!
What I used in the cookie bars…
peanut butter – duh!
zero calorie brown sugar -yes, that exists!
zero calorie granulated sweetener – more excited stuff!
butter
almond flour
gluten free baking flour
vanilla, salt, baking powder
chocolate chips
flaked sea salt
I know, more than likely you don’t have zero calorie brown sugar on hand and that’s okay, substituting with coconut sugar also work!

Peanut Butter Chocolate Chip Cookie Bars
Ingredients
- 3/4 c peanut butter, natural
- 1/4 c butter, soft
- 1/2 c zero calorie brown sugar Swerve
- 1/2 c zero calorie granulated sweetener Swerve
- 1 c almond flour
- 1/2 c gluten free baking flour
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/4 tsp salt (omit if your butter and peanut butter is salted)
- 1/2 c mini dark chocolate chips (use sugar-free chips if necessary)
- flaked sea salt for sprinkling
Instructions
- Preheat oven to 350 F and prepare a baking sheet with parchment paper (mine was about 12x9 inches).
- In a mixing bowl, use a handheld mixer to cream together the soft butter, peanut butter, vanilla, zero calorie brown sugar and zero calorie granulated sweetener. Add in the almond flour, gluten free flour, baking powder and salt. Mix until a dough forms. Add in the chocolate chips and continue mixing.
- Press the mixture evenly into the baking sheet. Bake for 8-12 minutes or until edges start to brown.
- Cut into bars and serve.

Can you sub something for the gluten free baking flour to make them keto?
I haven’t tried it but subbing for all almond flour could possibly work. The bake time may vary so keep that in mind. Let me know how it goes.
