I have to be honest, this recipe almost didn’t make it to the blog because I almost didn’t get photos of it. After this deep dish brownie came out of the oven, it took all my will power not to take a spoon to it right then and there. The peanut butter was oozing out the top and the warm chocolate chunks were calling me name (although they were probably scolding hot!).

Peanut Butter Stuffed Vegan Brownie Skillet
Ingredients
- 3/4 c gluten-free baking flour
- 1/4 c coconut sugar
- 1/4 c Swerve Sweetener, granulated
- 1/4 c unsweetened cocao powder
- 1/4 c unsweetened applesauce
- 1/4 c olive oil or coconut oil, melted
- 100g dark chocolate (dairy-free), chopped
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- pinch sea salt
- 2 tbsp peanut butter, natural
Instructions
- Place all your dry ingredients into a mixer and mix until combined. Add in the wet ingredients and continue mixing until a dough forms. Fold in chopped chocolate. Wrap dough in plastic and place in the freezer for 15 minutes.
- Preheat oven to 350 F and prepare an 8 inch cast iron skillet with non-stick spray. Press half of the cookie dough into the bottom of the skillet. Drop the peanut butter into the center and cover with remaining dough. It helps to lay a piece of parchment paper over the dough to press it down and pack it tightly. Bake for 13-16 minutes. Don't over bake. Let cool for 10 minutes before serving.
