Unlike truffles, these paleo cookie drops are baked into perfectly moist chocolate cookies and then dipped in rich dark chocolate and topped with flaked sea salt. If you visit my blog often you will notice that I top just about everything with flaked sea salt. I should really consider renaming my blog Peanut Butter Plus Sea Salt because I’m a little obsessed to say the least…

Double Chocolate Paleo Cookie Drops

Paleo double chocolate cookie drops made gluten free, dairy free and grain free!

  • 1/2 c almond flour, finely ground
  • 1/2 c unsweetened cocoa powder
  • 1/2 c granulated sweetener (erythritol or coconut sugar)
  • 1/4 c coconut flour
  • 1/4 c tapioca flour
  • 1/4 c coconut oil
  • 2 eggs, large
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp sea salt
  • 1/2 c dark chocolate (dairy free if necessary)
  • 1 tsp coconut oil
  • flaked sea salt for topping

  • Preheat oven to 350 F and prepare a baking sheet with parchment paper.
  • In a mixing bowl, stir together the almond flour, cocoa powder, granulated sweetener, coconut flour, tapioca flour, baking powder and salt until no lumps remain.
  • In another bowl, beat the eggs and vanilla until light and fluffy, about 1-2 minutes using a handheld mixer. Add in the 1/4 cup coconut oil and continue mixing until combined. Add the wet ingredients to the dry and mix until a dough forms. Separate the dough into 16 evenly sized cookie balls.
  • Place the cookies on the baking sheet about 1 inch apart and bake for 13-15 minutes. Let cool completely.
  • Once cooled, melt the chocolate and 1 teaspoon coconut oil in a microwave safe bowl. Dip each cookie in the chocolate until completely coated, use a fork to remove and let the excess chocolate drip. Place the chocolate covered cookies on a baking sheet lined with parchment paper. Cool until chocolate is solid. Sprinkle with flaked sea salt and serve.
