My favorite thing about this time of year (besides the crisp mornings and Autumn colors) is the flavors of fall. I can’t get enough of caramel and cinnamon flavored EVERYTHING! So this fall, you can catch me cozying up next to the fireplace with a freshly baked pear crisp drenched in caramel sauce and topped with ice cream.

What you need to make this vegan pear crisp

Quick, simple, delicious…those are just a few words to describe this recipe. I was able to whip up a skillet full of caramel pear crisp in one hour!

I promise this will become your new favorite fall recipe! So here’s what you need to make it:

For the filling:

Vegan butter

Fresh pears

Simply Nature Organic Light Brown Sugar

Cinnamon

For the Crisp:

gluten free oat flour

gluten free rolled oats

Baker’s Corner Almond Flour

arrowroot flour

full fat coconut milk (from the can)

Equipment

  • Large oven safe skillet
  • Mixing bowls

Ingredients

Filling

  • 4 tbsp vegan butter softened
  • 6 pears peeled, cored, sliced
  • 1/2 cup Simply Nature Organic Light Brown Sugar packed
  • 1/2 tsp cinnamon
  • 1/4 tsp sea salt

Crisp

  • 3/4 cup gluten free oat flour
  • 1/4 cup gluten free rolled oats
  • 1/4 cup Baker's Corner Almond Flour
  • 1/4 cup arrowroot flour or tapioca flour
  • 1/2 tsp cinnamon
  • 1/4 tsp sea salt
  • 1/3 cup Simple Nature Organic Coconut oil melted
  • 1/3 cup + 2 tbsp Simply Nature Organic Light Brown Sugar packed

Caramel Sauce

  • 1 cup full fat coconut milk from the can
  • 1/2 cup Simply Nature Organic Light Brown Sugar packed
  • pinch sea salt

Instructions

  • Preheat the oven to 350 F. Spread the softened butter over the bottom and slightly up the sides of the skillet.
  • In a large mixing bowl, toss the pear slices, brown sugar and cinnamon together until everything is well coated. Place the pears over the butter in the skillet and then set it aside.
  • In another mixing bowl, stir together the dry ingredients for the crisp and then add in the melted coconut oil. Stir until crumbles form. You may need to add 1-2 more tablespoons of coconut oil if your mixture is too dry. Top the pears with the crumbles and bake the crisp for 25-35 minutes and the pears are tender.
  • While the crisp is baking, prepare your caramel. Place the coconut milk and brown sugar into a small-medium sized pot. Stir and bring the mixture to a boil and then reduce the heat to a simmer. Let the mixture simmer for 10-15 minutes, stirring occasionally. The caramel will coat the back of a spoon when it's ready. Remove from heat and stir in the salt. Transfer the caramel to a bowl, cover and chill until ready to use.
  • Remove the crisp from the oven and let it cool for 10 minutes before serving warm with caramel sauce and vegan/gluten-free ice cream if desired.

Notes

You will know the crisp is ready when the pears are tender. If the crumble darkens too much, you can always cover it with tin foil and continue baking until the pears are ready. Enjoy!
