Maple Quinoa Granola Cereal | Gluten-Free & Vegan

This homemade maple quinoa granola recipe is loaded with cinnamon, warm vanilla, pumpkin seeds, chia and crunchy pecans and is naturally sweetened with maple syrup Ā and blackstrap molasses. This addicting and delicious blend of oats and quinoa make a perfect Autumn harvest cereal that’s gluten free and vegan!


This is the first recipe I’ve created (for my blog) since we moved to Atlanta! Yay for finally utilizing my new kitchen which is actually not so new. I’m pretty sure Tony Soprano has the same kitchen as I do. But it cooks food so that’s all I care about for now because I have so many delicious recipes planned this month. My big recipe test this week: S’mores Pumpkin Cupcakes with Toasted Meringue Frosting–sounds so good and I’m hoping I pull it off so I can finally utilize my kitchen torch/cigar lighter.

Maple Quinoa Harvest Granola Cereal | Gluten-Free & Vegan

Maple quinoa harvest granola makes a perfect gluten free breakfast or snacks. This cereal pairs well with milk, yogurt and fresh fruit.


  • 1/2 c quinoa, washed and cooked
  • 2 c gluten free rolled oats
  • 1 c pumpkin seeds
  • 1 c pecans
  • 1 tbsp chia seeds
  • 1/4 c pumpkin puree
  • 1/4 c coconut oil, melted
  • 3 tbsp 100% maple syrup
  • 1 tbsp molasses
  • 1 tsp vanilla extract
  • 1 tsp cinnamon


  • Preheat oven to 325 F and prepare a large baking sheet with parchment paper.
  • In a large mixing bowl, stir together the cooked quinoa, pumpkin seeds, chia seeds and pecans.
  • In another bowl, stir together the pumpkin puree, melted coconut oil, maple syrup, molasses, vanilla and cinnamon until well combined.
  • Add the wet ingredients to the dry and fold together until the dry ingredients are well coated. Transfer to the baking sheet and spread the granola into an even layer.
  • Bake for 15 minutes. Remove from oven and stir granola from the outside in. Return to the oven and bake for another 10-15 minutes. Be careful not to over bake and burn the granola. Granola will harden as it cools.


Store granola in an airtight container for up to 2 weeks
