I’ve been a healthy dessert connoisseur for a few years now and I’ve probably made a hundred different “healthy” brownie recipes and I can confidently say that none of them compare to this brownie recipe. First of all, these brownies do not taste healthy–like at all! My boyfriend stays 10 feet away from any food that’s labeled “healthy” and when he tried these, he had no idea I made them using all paleo and gluten-free ingredients! Secondly, the fudge factor on these are just insane! INSANE! Nothing can really describe it so I suggest you try it for yourself. Go ahead, you deserve it! Make yourself a batch of these brownies asap–I promise you won’t regret it!

If anyone ever tells your that you can’t have brownies while still trying to eat healthy, tell them that they are wrong and here’s a list of healthy brownies to prove it!

Paleo Brownies with Chocolate Hazelnut Swirl

Yield: 12

Paleo Brownies with Chocolate Hazelnut Swirl

Ingredients

  • 1/2 c dark chocolate, chopped
  • 1/4 c grass fed butter or ghee
  • 2 eggs, organic milk & eggs
  • 1 tsp vanilla extract
  • 1/2 c coconut sugar
  • 3/4 c almond flour
  • 2 tbsp raw cocao powder
  • 1/2 tsp baking soda
  • 1/8 tsp sea salt
  • 1/4 c chocolate hazelnut spread, paleo friendly

Instructions

  1. Preheat oven to 350 F and prepare an 8 inch pan with parchment paper and set aside.
  2. In a small sauce pan, stir together the butter, chocolate and vanilla extract over low/medium heat until melted and smooth. Remove from heat and set aside.
  3. In a mixing bowl, beat the eggs and coconut sugar together for about 1 minute. Add in the chocolate mixture and continue mixing until incorporated. In a separate bowl, stir together the almond flour, cocao powder, baking soda and salt. Add your wet mixture to your dry and mix just until combined.
  4. Next, transfer the batter to the prepared pan. Drop dollops of hazelnut spread over the batter and use a knife to swirl the hazelnut spread into the batter. Bake for 19-23 minutes.
  5. Let cool completely before cutting into 12 squares and serving.
  6. ENJOY!

Deep Dish Paleo Chocolate Chip Cookie

Ingredients

  • 1 c almond flour
  • 3 tbsp coconut oil, melted
  • 3 tbsp maple syrup
  • 1 egg, large
  • 1/4 tsp baking power
  • 1/8 tsp salt
  • 1/4 c chopped dark chocolate, sugar-free if available

Instructions

  1. Preheat oven 350F.
  2. In a large mixing bowl, add the almond flour, baking powder and salt. Add in the egg and maple syrup and use a hand held mixer to blend together. Add in the coconut oil and continue mixing. Fold in chocolate.
  3. Prepare 3 extra small skillets with non-stick spray or one medium 6 inch skillet. Press the dough evenly into the skillets/skillet and bake for 12-14 minutes or until golden brown.

I made my sweet potato skillet to serve just one in a baby 7-inch skillet. For two servings, double the recipe and go up a pan size. For three servings, triple the recipe and so on and so on. You get it, right? 🙂


I generally avoid cooking because I hate how long it take. If the cooking process isn’t quick and painless, I’ll probably just let Daniel make it. Which is why I avoided potatoes for so long. Sweet potatoes take forever to cook in the oven but when I discovered one simple step to cutting my cooking time in half, baking potatoes is no longer so daunting. My secret to keeping this sweet potato skillet under 10 minutes is to precook the chopped sweet potatoes in the microwave first. I like to microwave them for 2-3 minutes on high until soft. Doing this will reduce your cooking time tremendously [insert hands up emoji].

This Sweet Potato Breakfast Skillet is a hearty breakfast that's quick, easy and my favorite go-to meal. The best part this sweet and savory combination is that the entire recipe goes down in just one skillet! 

Ingredients

  • 1/2 sweet potato, washed and cubed
  • 1 c baby spinach
  • 1 egg, large
  • 1/2 tbsp extra virgin olive oil or oil of choice
  • 1/4 tsp cayenne paper
  • salt and pepper to taste
  • pinch of everything bagel seasoning blend
    other add-ins if desired
  • grape tomatoes
  • avocado
  • onions

Instructions

  1. Place your cubed sweet potatoes on a microwave safe plate and microwave on high for 2-3 minutes or until sweet potatoes are soft.
  2. Add oil to a 7-inch skillet, once hot add cubed potatoes and seasonings then cook on medium heat until potatoes have browned (about 2-3 minutes). Add in the spinach, stir and cook until wilted (about 1-2 minutes). Reduce heat to low and create an opening for the egg. Add the egg, cover and cook until the egg is at desired finish.
