I’ve received tons of messages over the years asking for paleo recipes as I tend to use oats and peanut butter in most of mine. ┬áSo I present to you this super delicious and super simple Paleo Granola made of almonds, seeds, shredded coconut, flax meal and lathered in coconut oil and almond butter. A nutty and seedy snack that’s irresistible and seriously addicting! I made this recipe paleo like you asked as well as gluten-free and keto friendly! YAY! Now everyone can enjoy this granola.

My favorite way to eat granola is just like a big bowl of cereal with cold almond milk and loaded with fruit. Occasionally, I’ll sprinkle some granola over a smoothie bowl or a cup of yogurt. If you love granola as much as I do, then this recipe is perfect for you! If you are looking for more granola recipes, here are some of my favorites:

Paleo & Grain-Free Granola (Keto Friendly Option)

This Keto Friendly and Paleo Granola is an easy and satisfying gluten-free and vegan granola recipe that makes the perfect breakfast or snack.

Ingredients

  • 1/3 c walnuts, chopped
  • 1/4 c pumpkin seeds
  • 1/4 c almonds, chopped
  • 1/2 c unsweetened coconut flakes
  • 2 tbsp ground flax
  • 6 tbsp natural almond butter
  • 2 tbsp coconut oil, melted
  • 2 tbsp pure maple syrup or sugar free maple syrup for keto

Instructions

  1. Preheat oven to 350 F and prepare a baking sheet with parchment paper.
  2. Place all the dry ingredients into a stand alone mixer and stir until combined. Add in the remaining wet ingredients and mix until well incorporated (I used the paddle attachment).
  3. Spread the mixture in one even layer on the baking sheet. Bake for 12-15 minutes, stirring every 5 or so minutes. Granola will harden as it cools.

Notes

Store granola in an airtight container for up two weeks.

Keto Almond Butter Cups made gluten-free, paleo, vegan and refined sugar-free.

Ingredients

  • 100g dark chocolate (sugar-free if available)
  • 2 tbsp almond butter, natural
  • 1 1/2 tbsp zero calorie confectioners sweetener Swerve
  • 1/2 tbsp coconut flour

Instructions

  1. Melt chocolate in a microwave safe bowl until smooth. Spoon half of the chocolate into 7 (small) cupcake liners and set aside.
  2. In a small bowl, stir together the almond butter, zero calorie sweetener and coconut flour until smooth. Spoon about 1 tsp into the center of each chocolate cup. Top with remaining chocolate.
  3. Place in the fridge or freezer to chill until chocolate hardens.
  4. ENJOY!

Keto friendly chocolate chip cookies!

Ingredients

  • 1 1/2 c almond flour
  • 32g vanilla protein powder PEScience 30% off code PBCHOCO
  • 2 packets pure stevia
  • 1/4 c unsweetened applesauce
  • 2 tbsp extra virgin coconut oil or butter, melted
  • 1 tbsp black coffee, optional
  • 1/2 tsp butter extract if using coconut oil
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking powder
  • pinch sea salt
  • 1/4 c extra dark sugar-free chocolate chips

Instructions

  1. Place all the dry ingredients into a mixing bowl and stir until combined. Add in the remaining ingredients and mix until a dough forms. Cover with plastic wrap and chill in the freezer for 15 minutes.
  2. Preheat oven to 350 F and prepare a baking sheet with parchment paper. Use a cookie scooper to make 12 evenly sized balls. Place the balls on the baking sheet and press them flat. Bake for 13-15 minutes or until edges start to brown.
  3. Let cool before serving.
