Sweet Potato Skillet Serving Sizes

I made my sweet potato skillet to serve just one in a baby 7-inch skillet. For two servings, double the recipe and go up a pan size. For three servings, triple the recipe and so on and so on. You get it, right? ­čÖé


I generally avoid cooking because I hate how long it take. If the cooking process isn’t quick and painless, I’ll probably just let Daniel make it. Which is why I avoided potatoes for so long. Sweet potatoes take forever to cook in the oven but when I discovered one simple step to cutting my cooking time in half, baking potatoes is no longer so daunting. My secret to keeping this sweet potato skillet under 10 minutes is to precook the chopped sweet potatoes in the microwave first. I like to microwave them for 2-3 minutes on high until soft. Doing this will reduce your cooking time tremendously [insert hands up emoji].

Sweet Potato Breakfast Skillet with Spinach (gluten-free & paleo)

This Sweet Potato Breakfast Skillet is a hearty breakfast that's quick, easy and my favorite go-to meal. The best part this sweet and savory combination is that the entire recipe goes down in just one skillet! 

Ingredients

  • 1/2 sweet potato, washed and cubed
  • 1 c baby spinach
  • 1 egg, large
  • 1/2 tbsp extra virgin olive oil or oil of choice
  • 1/4 tsp cayenne paper
  • salt and pepper to taste
  • pinch of everything bagel seasoning blend
    other add-ins if desired
  • grape tomatoes
  • avocado
  • onions

Instructions

  1. Place your cubed sweet potatoes on a microwave safe plate and microwave on high for 2-3 minutes or until sweet potatoes are soft.
  2. Add oil to a 7-inch skillet, once hot add cubed potatoes and seasonings then cook on medium heat until potatoes have browned (about 2-3 minutes). Add in the spinach, stir and cook until wilted (about 1-2 minutes). Reduce heat to low and create an opening for the egg. Add the egg, cover and cook until the egg is at desired finish.

Healthy White Chocolate Bars (gluten-free, sugar-free & high protein)

This 5 ingredients white chocolate is sugar-free, low in carbs and high in protein. In just 5 minutes you can have a decadent keto friendly, gluten-free, paleo white chocolate perfect for using as baking chips in recipes.

This recipe is super simple to make and will take just a few minutes to whip together. I used protein powder as my dry milk base in this recipe but you can sub the protein for any powdered milk that you like.


Healthy White Chocolate Bars (gluten-free, sugar-free & high protein)

Ingredients

  • 1 c cocao butter, chopped
  • 1/4 c vanilla protein powder [PEScience 30% off code PBCHOCO]
  • 2 tsp coconut oil, melted
  • 1 packet stevia
  • 1 tsp vanilla extract

Instructions

  1. In a double boiler (small pot of simmering water water with a glass bowl over it) gently melt the cocao butter, coconut oil and vanilla extract. Once melted, remove from heat and stir in the protein powder and stevia.
  2. Pour mixture into chocolate molds, chocolate chip molds, a small square pan or anything that the chocolate can be easily removed when cooled. I used two small Tupperware containers. Now is the time to sprinkle with toppings if desired.
  3. Place in the freezer until chocolate hardens.

Notes

For a dairy free or vegan option use a powdered non-dairy milk in place of the protein.

Healthy Chocolate Covered Salted Pumpkin Caramels

 

These soft, chewy and melt-in-your-mouth pumpkin date caramels are covered in decadent dark chocolate and sprinkled with flaked salt making a perfect candy treat for the holidays.


 

When I made these caramels earlier this week, I planned on bringing the batch to my theatre company meeting. Well, I have a confession to make. Not a single one made it to the theatre; I ate them all. ALL. OF. THEM. In like two days. It was worth it though and I don’t regret a thing.

 

 

These caramels can be a little tricky to work with so read the recipe completely through before starting. Once you remove them from the freezer, you have to work fast or they start to thaw again. I like to store them in the freezer because they never freeze completely or get solid but if you prefer a softer caramel, storing them in the fridge will also work.

In this recipe I used a pumpkin flavored peanut butter, however any natural peanut butter will work and if for paleo or allergy reasons, almond butter or cashew butter will also work.

Healthy Chocolate Covered Salted Pumpkin Caramels

Yield: 13-15 caramels

Healthy Chocolate Covered Salted Pumpkin Caramels

Ingredients

  • 15 medjool dates, pitted
  • 3 tbsp peanut butter, vegan if necessary Nuts 'N More
  • 2 tbsp pumpkin puree
  • 32g vanilla protein powder, vegan if necessary PEScience 30% off code PBCHOCO
  • 1 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1/2 c sugar-free chocolate chips, vegan if necessary
  • 1 tbsp coconut oil
  • flaked sea salt for sprinkling

Instructions

  1. Place the pitted dates, peanut butter, protein powder, pumpkin puree and spices into a food processor and blend until a sticky dough forms. You will need to stop and scrape the sides a few times. This entire processor takes a couple of minutes of blending and scraping.
  2. Place the caramel between two pieces of parchment paper and place in the freezer for 45 minutes. Remove and then use a rolling pin to flatten the caramel between the parchment paper. Use a knife to cut the caramel into squares. Repeat with scraps until you have used all the caramel.
  3. Return the caramels to the freezer for 20 minutes.
  4. Before removing caramels, prepare your chocolate by placing the chocolate chips and coconut oil into a microwave safe bowl and placing in the microwave for 10 second increments, stirring between each increment until chocolate is smooth.
  5. Remove caramels from the freezer and dip each one in the chocolate. I used a fork to dip each one and let the excess chocolate drip off then place on a piece of parchment paper. After all the caramels are covered, return to the freezer until chocolate is solid. Sprinkle with salt and serve.
  6. *Note: Store caramels in the fridge or freezer. They won't freezer completely so you can serve them directly from the freezer.
