After Thanksgiving came and went, I realized that I didn’t get one slice of pie on that food holiday. So last night I decided to make it up to myself and bake my two favorite pies in one.

Pumpkin Pie + Pecan Pie = literally the most amazing piece of dessert that I have ever put in my mouth.


                                  

These pie bars are so rich and flavorful that you wouldn’t even know that they are refined sugar-free and gluten-free!

Healthy Pumpkin Pecan Pie Bars (gluten-free)

Healthy Pumpkin Pecan Pie Bars (gluten-free)

Gluten-free and refined sugar-free Pumpkin Pecan Pie Bars are the perfect way to treat your Thanksgiving Pie withdrawals. Layered with a melt in your mouth crust, creamy pumpkin and rich caramelized pecans.

Ingredients

    Crust
  • 1 c gluten-free flour
  • 1/4 c Truvia or granulated sweetener
  • 32g protein powder Pescience 30% OFF code PBCHOCO
  • 1/4 c coconut oil, melted
  • 1/4 c honey
  • 3 tbsp unsweetened almond milk
  • 1/4 tsp cinnamon
  • 1/8 tsp salt
    Pumpkin Pie Layer
  • 1 + 1/3 c pumpkin puree
  • 1/4 c Truvia or granulated sweetener
  • 3 egg whites
  • 4 tbsp greek yogurt
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/8 tsp salt
  • 2 packets stevia (or to taste)
    Pecan Layer
  • 1/4 c Truvia
  • 1/4 c coconut sugar (you can use all Truvia or all coconut sugar if desired)
  • 3 tbsp unsweetened almond milk
  • 1/2 tbsp molasses
  • 1 tsp vanilla
  • 1/8 tsp salt
  • 1/3 c pecans, chopped

Instructions

  1. Preheat oven to 350F and prepare a loaf pan or 6x6 inch square pan with parchment paper and set aside.
  2. In a medium bowl or mixer, stir all dry crust ingredients together. Add the remaining crust ingredients and continue stirring until a crumbly dough forms. Press the dough evenly into the bottom of the prepared pan and set aside.
  3. Place all pumpkin pie layer ingredients into a blender and blitz just until smooth. Pour the pumpkin layer over the crust. Carefully place the pan in the oven and bake for 35-40 minutes. Or just until the center of the pie is almost set. It needs to be solid enough to hold the pecan layer.
  4. In the mean time make your pecan layer by placing the coconut sugar, almond milk, molasses, vanilla and salt into a small pan over medium-high heat. Bring the mixture to a boil while continuously stirring for 2-3 minutes. Remove from heat and stir in pecans.
  5. Once the pumpkin layer is solid enough to hold the pecans, remove the pan from the oven and evenly spread the pecan layer over the pumpkin. Return the oven for 10-15 minutes.
  6. Let cool completely before serving. Store in an airtight container in the refrigerator.

Healthy gluten-free pumpkin donuts frosted with a maple glaze. These maple frosted pumpkin donuts are made high in protein and refined sugar-free.

 


I know, I know. I said I wasn’t going to start making pumpkin recipes until September 1st but I couldn’t help myself. And now I’m so glad I couldn’t because this pumpkin donut recipe is not only the best donut recipe I’ve ever made but also the best pumpkin recipe.

I covered these donuts in a creamy maple frosting made from protein powder, coconut oil, almond milk and sugar-free maple syrup then topped them with crushed pecans.

After making these donuts I had to run off to dinner so I didn’t get time to actually eat one (besides that one bite) so I put them in the fridge for later. When later finally came and I was able to sit down and enjoy one of these donuts, they were even better than I expected and after a day in the fridge, they hadn’t lost any flavor at all.

Healthy Maple Frosted Pumpkin Donuts

Healthy Maple Frosted Pumpkin Donuts

Ingredients

  • 1/2 c brown rice flour
  • 1/4 c almond flour

  • 2 eggs, whole
  • 1/4 c + 2 tbsp pumpkin puree
  • 1/4 c unsweetened almond milk
  • 1/4 c coconut sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 3/4 tsp baking soda
  • 3/4 tsp baking powder
    Maple Glaze
  • 2 tbsp coconut oil, melted
  • 1 tbsp all natural sugar-free maple syrup
  • 16g vanilla protein powder
  • 1 tbsp unsweetened almond milk
  • 1/2 tsp vanilla extract
    Topping
  • crushed pecans

Instructions

  1. Preheat oven to 350F and prepare a standard sized donut mold pan with non-stick spray.
  2. In a large bowl, beat the eggs, pumpkin, almond milk and vanilla extract until fluffy.
  3. Add in the brown rice flour, almond flour, protein powder, coconut sugar, cinnamon, baking soda and baking powder. Mix until all ingredients are incorporated.
  4. Place the batter into a zip-loc bag and cut the corner to create a piping bag.
  5. Pipe the batter into the donut molds. Mine filled 7 molds. Bake donuts for 10-12 minutes.
  6. Once donuts are cooled, stir together the melted coconut oil, maple syrup and vanilla. Whisk in the protein until smooth. Add the almond milk and continue mixing until incorporated. Dip each donut into the glaze and top with crushed pecans.

Healthy Pumpkin Cream Cheesecake Cookies {gluten-free + high protein}

Ingredients

  • 1/4 c coconut flour
  • 1/4 c almond flour
  • 1 scoop vanilla protein powder (I used PEScience Gourmet Vanilla 30% OFF using code PBCHOCO)
  • 1/4 c coconut sugar
  • 1/2 c natural peanut butter (I used Nuts 'N More White Chocolate)
  • 1/4 c plus 2 tbsp. pumpkin puree
  • 1 tsp. vanilla extract
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
    Cheesecake
  • 2 tbsp. reduced fat cream cheese
  • 1 tbsp. greek yogurt
  • 2 tbsp. vanilla protein powder (I used PESience)
  • 1 egg white
  • 1/2 tsp. vanilla extract

Instructions

  1. Pre-heat oven to 375F and prepare a baking sheet with parchment paper.
  2. In a bowl, sift all dry ingredients together.
  3. In another bowl, stir together peanut butter, pumpkin and vanilla then add to your dry ingredients and stir until completely combined.
  4. Use a cookie scoop to make 14 rounded cookies. Place them on the baking sheet about 1" apart and press them down using the back of the cookie scoop or your thumb to create an indent.
  5. Whisk together all the cheesecake ingredients until smooth.
  6. Fill cookies with cheesecake filling and sprinkle with cinnamon.
  7. Bake for 16-20 minutes or until cheesecake is firm.
