Vegan Salted Caramel Walnut Blondies

Delicious vegan blondies stuffed with dark chocolate and walnuts and drizzled with salted caramel for the perfect treat.

What you need to make these vegan blondies

The most heavenly chocolate chunk blondies! They’re crisp on top, perfectly soft, gooey in the center, and studded with walnuts all while being vegan!

You are going to love them, so here’ s what you need:

  • flax meal
  • water
  • all purpose flour
  • baking soda
  • walnuts, chopped
  • vegan chocolate chips and vegan chocolate, chopped
  • vegan butter, I like to use the sticks
  • light brown sugar or coconut sugar to lighten them up
  • granulated cane sugar or Truvia to lighten them up
  • vanilla extract
  • flaked sea salt

for the salted caramel

  • coconut milk, full fat from the can
  • coconut sugar
  • coconut oil
  • vanilla extract
  • sea salt

I like to prep the caramel and keep it in the refrigerator for up to week and drizzle it all over EVERYTHING sweet! With that being said, this recipe will make way more caramel than you need for these blondies. If you prefer no caramel, the blondies by themselves are just as delicious!

Vegan Salted Caramel Blondies

These delicious vegan blondies are full of chocolate and walnuts and topped with salted caramel drizzle.

Ingredients

  • 1 tbsp ground flax meal
  • 3 tbsp water
  • 1 cup all purpose flour
  • 1/2 tsp baking soda
  • 1/2 cup walnuts chopped
  • 1 cup mini chocolate chips vegan
  • 1/4 cup dark chocolate bar chopped
  • 1/4 cup + 2 tbsp vegan butter soft
  • 1/3 cup light brown sugar or coconut sugar
  • 1/4 cup granulated cane sugar or Truvia
  • 1 tsp vanilla extract
  • flaked sea salt for topping

for the salted caramel

  • 1 salted caramel sauce batch

Instructions

  • In a small bowl, stir together the flax and water and then set aside for 5 minutes to gel. Preheat the oven to 350 F and prepare a 8×8 inch pan with parchment paper both ways for easy removal.
  • In a bowl, stir together the flour, baking soda, chocolate chips, chopped chocolate and walnuts until combined and then set aside. In another bowl, using a hand held mixer beat the butter, brown sugar and cane sugar until creamy. Add in the vanilla and flax mix and beat until well combined. Add the dry ingredients to the wet and mix until no dry spots remain and a dough froms. Press the dough evenly into the bottom of the pan and bake for 15-18 minutes or until edges start to brown. You don't want to over bake them so don't keep them in the oven for any longer than 18 minutes.
  • Meanwhile, prepare your caramel sauce. Once the blondies are done, let them cool for at least 15 minutes before sprinklign with flaked sea salt and drizzling with caramel and cutting into slices and serving.
