When I was a kid I remember going to the grocery store with my mom and we would always stop by the bakery so she could get my sister and I chocolate thumbprint cookies. They were magical and delicious. It was the cookie of my childhood. Now it seems like forever since I’ve heard anyone talk about a thumbprint cookie. I almost forgot they existed, until my mom mention a story that triggered my memory. I knew right then that my entire day would be spent trying to recreate the cookie from my past–a healthy version, of course!

Recipe makes 6 delicious-mouth watering-dangerously healthy cookies! For paleo use almond butter.

I got almost all of my ingredients from VitaCost.com

  • 1/4 Cup Natural Peanut Butter
  • 3 tbsp Coconut Flour
  • 2 tbsp Coconut Sugar
  • 1 tbsp Ground Flax
  • 1 egg (Eliminate for vegan and double flax mixed with water)
  • 1/2 tsp Vanilla Extract
  • 1/2 tsp Baking Powder
  • 1/4 Cup Dark Chocolate Chips (Enjoy life for vegan)
  • 1 tsp Coconut Oil
  • Sea Salt for sprinkling
  • Sprinkles for rolling (optional but necessary)

Mix coconut flour, flax, sugar and baking powder together. Add peanut butter, vanilla and egg. Once everything is mixed together, use a cookie scoop to make 6 balls and roll them in sprinkles. Place balls on a baking sheet lined with parchment paper and press them down using the back of the cookie scoop, your thumb, a spoon or a melon baller–they all work perfectly. Bake for 7-8 minutes at 350f. While cookies are baking, melt chocolate chips and coconut oil. I used a small glass bowl over a smaller pot of boiling water. Fill your cookies with chocolate and let cool and enjoy!

Healthy Homemade Protein Bars (gluten-free & high fiber)

Healthy home made protein bars are made gluten-free and high in fiber. These bars come in three flavors: peanut butter, birthday cake and chocolate chunk.

 

Have you every looked the ingredient list on the back of a protein bar? Scary right? There’s always a list of ingredients I’ve never heard of and can’t pronounce so I set out to make a protein bar using minimal ingredients. Although, I do find making these bars time consuming, they are delicious and totally worth the extra time it takes.


*I am currently working on a revised version of this recipe for larger and simpler batches.

All of these bars have at least 27g of protein and 24g of fiber! The base bar (before adding flavors) are under 300 calories and roughly 34g carbohydrates. All of these bars include the magic ingredient: VitaFiber Syrup!  VitaFiber is a magical syrup that is GMO-free, sugar-free, gluten-free and high in fiber! PEANUT BUTTER PROTEIN BAR

28g Vanilla Protein Powder

2 tbsp. VitaFiber Syrup

1 tbsp. Almond Flour

1 tbsp. Powdered Peanut Butter

1 tsp. Stevia

1 tsp. Vanilla Extract

2 tsp. Natural Peanut Butter

1 tbsp. Vanilla Protein Powder

In a small bowl mix together peanut butter and 1 tbsp. protein powder. Separate into 5-7 pieces, roll into ball and set aside. Mix almond flour, protein powder, powdered peanut butter and stevia in a bowl and set aside. In a small pan, on low heat warm the vitafiber and vanilla extract until small bubbles form. Turn off heat and slowly add flour/protein mixture. Mix as well as you can then pour mixture between a folded piece of parchment paper and kneed until mixed entirely. Fold in peanut butter balls. Mold into bar shape (I used two large knives to press and flatten). Store in an air tight container at room temperature.


WHITE CHOCOLATE BIRTHDAY CAKE PROTEIN BAR

2 tbsp. VitaFiber Syrup

2 tbsp. Almond Flour

28g Vanilla Protein Powder

1 tsp. Stevia

1 tsp. Butter Extract

1 tbsp. Sprinkles

1 tbsp. White Chocolate Chips

Mix together flour, protein powder and stevia, set aside.

In a small sauce pan, heat vitafiber and extract on low heat until it bubbles. Turn off heat and slowly add flour/protein mixture. Mix as well as you can then pour mixture between a folded piece of parchment paper and kneed until mixed entirely. Fold in sprinkles and chips. Mold into bar shape (I used two large knives to press and flatten). Store in an air tight container at room temperature.



CHOCOLATE CHUNK PROTEIN BAR

2 tbsp. VitaFiber Syrup

2 tbsp. Almond Flour

28g Vanilla Protein Powder

1 tsp. Stevia

1 tsp. Vanilla Extract

1 tbsp. Dark Chocolate Chunks

Mix together flour, protein powder and stevia, set aside.

In a small sauce pan, heat vitafiber and extract on low heat until it bubbles. Turn off heat and slowly add flour/protein mixture. Mix as well as you can then pour mixture between a folded piece of parchment paper and kneed until mixed entirely. Fold in chocolate. Mold into bar shape (I used two large knives to press and flatten). Store in an air tight container at room temperature.

Healthiest Carrot Cake with Cream Cheese Frosting

My Birthday was on January 14th and I was determined to give myself a delicious but HEALTHY cake without all the butter, sugar and oils. I wanted it to be moist and decadent but not break my diet.

This Carrot Cake exceeded all of my expectations! I still can’t believe I came up with such perfection on the first try!


I get most of my ingredients from vitacost.com. You can get whole food ingredients on your doorstep THE NEXT DAY for much cheaper than any grocery store.

 

 

 

 

 

Recipe:

  • 1 Cup Grated Carrots (raw)
  • 1/2 Cup Almond Flour
  • 1/4 Cup Coconut Sugar
  • 4 Tbsp Flaxseed Flour
  • 3 Tbsp Protein Powder (I used Vanilla Whey)
  • 2 Whole Eggs 3 Eggs Whites
  • 2 Tsp Cinnamon
  • 1 Tsp Vanilla Extract
  • 1/2 Tsp Baking Powder
  • 1/2 Tsp Baking Soda
  • 2 Packets Stevia

FROSTING:

  • 3/4 Cup Greek Yogurt
  • 3 oz Low Fat or Fat Free Cream Cheese
  • 1 Scoop Vanilla Whey Protein Powder

TOPPING: Chocolate Curls. Use a peeler on a dark chocolate bar to create tiny chocolate curls.

Pre-heat oven to 325f. Mix all dry ingredients together and set aside. Mix all wet ingredients plus carrots in a mixer and then add the dry ingredients. Pour batter into a greased 8inch round pan and bake for 26-28 minutes. Once cooled, cut in half and use 1/4 of the frosting for the middle layer. Put the cake back together and frost entirely. Sprinkle with chocolate curls.
